- 800 g chicken thighs
- 13 g ABM spices
for chicken - 12 g salt
- 40 g sunflower oil
- 2 g honey
- 3 g garlic
- 8 ml lemon juice
Shata (sauce)
- 100 g lemon juice
- 40 g green pepper
- 1/4 bunch of basil
- 2 g salt
about Iraqi chicken
The first (known) recipe ever written down is more than 4,000 years old and comes from Mesopotamia. Modern-day Iraq was a large part of this region, known for its cultural diversity. This rich history makes Iraqi cuisine one of the most versatile in the world.
For our Iraqi chicken, we use a blend of many spices, a rich and flavorful way to prepare chicken. We serve it with Shata, a sauce made of lemon, basil and green pepper. The flavor of the chicken combines perfectly with this sweet (basil), sour and spicy sauce.
How do you make it?
- Mix the spices with the salt, honey,
garlic, lemon juice and sunflower oil - Let it marinate for at least half an hour
- Fry the chicken in a hot skillet until golden brown and cooked
Shata - Blend into a sauce in food processor
